One time my little guy asked my wife that he has not been having her banana bread for a while.
Since my wife has not been able to make / cook anything due to pregnancy – I voluntarily took the challenge to bake my little guy his favorite banana cakes using my wife’s recipe.
To be honestly speaking, I had never bake any bread / cakes in my whole life before.
Ingredients:
2 Fully Ripe Bananas
6 Eggs
130 grams of Raw Sugar
150 grams of Margarine (Blue Band brand is highly recommended)
170 grams of Self Raising Flour (a wholemeal one is better)
1/2 tablespoon of Baking Mix (Koepoe Koepoe brand is highly recommended)
I used the KitchenAid Mixer to help me with the mixing process.
How to cook:
1. Melt the margarine in the microwave for 30 seconds or less depending on the microwave power capacity. You do not want to burn them. Let at cool for 5 – 10 minutes. The melting process is only to help the mixing process faster.
2. Peel all the bananas’ skins and mash them until soft.
3. Put the raw sugar, the eggs, and the baking mix into the mixing bowl, and mix them for 1 or 2 minutes at the slow speed.
4. Add the margarine and the mashed banana into the mixing bowl, and let it run for another 1 minute.
5. Slowly add the flour into the mixing bowl until they are all mixed nicely together.
6. Prepare the bread loaf pan, and pour the liquid dough to it. Hints: you may want to use a baking paper around the pan. This makes it easier for you to pull the cake once done.
7. Let it sit for 10 minutes.
8. Bake it in the oven at 180 degrees celcius for 45 minutes.
